    Winner winner mutton dinner! Made this tonight and it was INCREDIBLE. I didn't have to add the honey at the end (as it was already sweet enough) and I omitted the mint. I took the lid off the braising pan for the last 15 minutes of cooking so I wouldn't have to reduce the sauce once it came out, and it worked just fine. This recipe would be fabulous with beef, too. It would probably work with pork and chicken as well, but if you cannot afford (or don't like) lamb, beef is your best alternative, imho. Thank you Chef John, you really hit one out of the park (like you always do)!

    mmmm, made this with a side of your stuffed squash, didn't have any lamb though so made it with short ribs, i didn't think it would be very good but it actually wasn't half bad… they were too thick though and therefore the center wasn't fork tender but the outside was, i bet it would have been ok if i'd cut them in half.

The word had been borrowed in M.E. as entre "act of entering."
