Whew…. In this video Andi and Olivia, her toddler, bake chocolate chip cookies. Andi shares some great tips for keeping toddlers engaged while baking.
While baking, Andi doesn’t get all stressed out about the little things. After all, messes can be cleaned up. She is such a great role model.
Here is her favorite chocolate chip cookie recipe. I’m planning to try it later today.
Andi Manzano’s Chocolate Chip Cookies:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 1/2 teaspoons cornstarch
1/2 teaspoon salt
3/4 cup unsalted butter, melted
3/4 cup loosely packed light brown sugar
1/2 cup white sugar
1 large egg and 1 egg yolk
2 teaspoons pure vanilla extract
1 cup chocolate chips or chocolate chunks
Preheat oven to 325°F
Mix ingredients in a bowl except for the chocolate chips in a bowl. After the ingredients are combined, add in the chocolate chips.
Grease a glass baking dish. (This is different. I’ve never cooked cookies in the glass baking dish, I’ve always used a cookie pan with no sides. However, her cookies look like they are thicker and thus chewier.)
Drop spoonfuls of cookie dough in baking dish about 2 inches apart.
Bake cookies for 8-10 minutes depending on how chewy you want them.
